    A HEALTHY DELIGHT : LETTUCE WRAPS

    Creamy cottage cheese or tenderly cooked mushrooms or crispy corn in your delicate lettuce leaf and the creamy yogurt topping. It has various filling with different sauces each filling has its flavor and taste with yogurt and tahini topping which made these crunchy wraps to creamy wraps.

    It is super light, extremely healthy, vegan, and pretty easy to make. It is a colorful and delicious delight that is served in a lettuce leaf. They would make a perfect light summer meal or appetizer. It has vibrant colors of veggies which makes it tempting. It is full of vegetables which makes the wrap filling and healthy.

    A perfect lettuce wrap is full of veggies with some homemade sauce which is mixed with raw vegetables to enhance the taste and give the flavors to it. Then it should be topped with creamy dressing which accomplishes the crunchy wraps. You can make a variety of filling according to your choice and you choose your ingredients for the wrap.

    Which Lettuce Is Best For Wraps?

    Iceberg, Romaine, and Boston are the variety of lettuce which works pretty well for lettuce wraps. Among these three kinds of lettuce, Romaine lettuce is my favorite. Romaine lettuce is long, slightly bitter leaves and sturdy, sweeter centers, romaine provides a robust crunch to any meal. It is a great source of dietary fiber, vitamin C, and iron. It also contains magnesium and calcium.

    In my recipe, I have made three types of filling for the lettuce wraps.

    Cottage cheese filling it has fresh cottage cheese with sauce and veggies like tomato and cucumber. It is a refreshing filling that is drizzled on the veggies and cottage cheese. It is flavored with garlic, pepper, and chili.

    Mushroom filling it has stir-fried mushrooms with onions and colorful veggies. This filling is cooked as it consists of mushrooms which can not be eaten raw. With a drop of olive oil, it is stir-fried and garnished with freshly chopped coriander leaves.

    Corn filling has boiled corns with a salsa made from onion, tomato, and cucumber. It has a drizzle of honey sauce to balance the flavor. It is a crunchy filling for the wraps and has a tangy flavor.

    These are filled inside the lettuce leaf and drizzle of yogurt cream topping. Yogurt cream topping is made from tahini paste, yogurt, and salt. It is a creamy sauce which accomplishes the wrap and makes it more tempting. 

    Ingredients

    Cottage Cheese Filling

    • Olive oil 2 tbs
    • Lemon juice 2 tbs
    • Honey ½ tbs
    • Sesame oil ¼ tsp
    • Salt ½ tsp
    • Black pepper powder 1 tsp
    • Garlic crushed 1 tsp
    • Green chili 1
    • Cottage cheese ½ Cup
    • Tomatoes 1 medium
    • Cucumber ½ Cup
    • Black olives 1 tbs

    Mushroom Filling 

    • Olive oil 1 tbs
    • Mushroom 1 Cup
    • Salt to taste
    • Green capsicum julienne 1/4
    • Yellow capsicum julienne 1/4
    • Red capsicum julienne 1/4
    • Onion 1
    • Fresh coriander 2 tbs 

    Corn Filling

    • Olive oil 2 tbs
    • Lemon juice 2 tbs
    • Red chili ½ tsp
    • Garlic crushed 1 tsp
    • Salt ¼ tsp
    • Black pepper powder ½ tsp
    • Honey 1 tsp
    • Tomatoes cubes 1 medium
    • Onion 1 medium
    • Cucumber ½ Cup
    • Corns boiled ½ Cup
    • Fresh coriander 2 tbs 

    Yogurt Sauce For Topping

    • Tahini paste ½ Cup
    • Yogurt ½ Cup
    • Salt ¼ tsp

    Assembling

    • Iceberg leaves
    • Cottage cheese filling
    • Mushroom filling 
    • Corn filling
    • Prepared yogurt sauce

    Method

    For Cottage Cheese Filling 

    1. In a bowl, add olive oil, lemon juice, honey, sesame oil, salt, black pepper powder, garlic, green chili, and whisk well & set aside.
    2. In a bowl, cottage cheese, tomato, cucumber, black olives and mix well.
    3. Gradually add prepared salad dressing and mix well.

    For Mushroom Filling

    1. In a frying pan, add olive oil.
    2. Add onion and mix well.
    3. Add capsicums and cook for 2 minutes.
    4. Add mushroom and sprinkle slat.
    5. Mix it well and let the mushrooms cook.

    For Corn Filling

    1. In a bowl, add olive oil, lemon juice, red chili crushed, garlic, salt, black pepper powder, honey, and whisk well & set aside.
    2. In a bowl, add tomato, onion, cucumber, corns kernels, fresh coriander, prepared salad dressing, and mix well.

    For Yogurt Topping

    1. In a bowl, add tahini paste, yogurt, salt and whisk well.

    Assembling

    1. On each iceberg leaves, add the prepared filling.
    2. Drizzle yogurt sauce.
    3. Sprinkle fresh coriander and serve.
