    Preparing the Turkey Neck

    1. Begin by purchasing a fresh turkey neck from the butcher.
    2. Rinse the neck in cold water and pat it dry with paper towels.
    3. Trim off any excess fat and skin from the neck.
    4. Cut the neck into smaller pieces, if desired.

    Marinating the Neck

    1. In a large bowl, mix together the ingredients for your marinade.
    2. Place the turkey neck pieces into the marinade and coat them completely.
    3. Cover the bowl and let the neck marinate for at least two hours in the refrigerator.

    Smoking the Neck

    1. Preheat your smoker to 275 degrees Fahrenheit.
    2. Place the turkey neck pieces onto the smoker racks.
    3. Smoke the neck for about two hours, or until the internal temperature of the neck reaches 165 degrees Fahrenheit.
